Baked Salmon with Fennel
Tender flaked salmon fillets roasted with caramelized fennel, lemon, and herbs for an elegant yet simple weeknight dinner.

Ingredients
- •4 fillets (6 oz each) salmon
- •2 medium bulbs fennel
- •3 tablespoons olive oil
- •1 lemon
- •2 cloves garlic, minced
- •1 teaspoon dried thyme
- •to taste salt and black pepper
- •1/2 cup dry white wine
Directions
- 1Preheat oven to 400°F (200°C). Trim fennel bulbs, cut into wedges, and toss with 2 tablespoons olive oil, salt, and pepper.
- 2Spread fennel on a baking sheet and roast for 15 minutes until beginning to soften.
- 3Push fennel to the sides, place salmon fillets skin-side down in the center, drizzle with remaining olive oil, minced garlic, thyme, lemon juice, and white wine.
- 4Season salmon with salt and pepper, then bake for 12-15 minutes until salmon flakes easily with a fork.
- 5Serve salmon with caramelized fennel, drizzling pan juices over top and garnishing with fresh lemon wedges.
