Baked Salmon with Garlic and Roasted Zucchini

Ingredients
- •4 salmon fillets (6 oz each)
- •3 medium zucchini, sliced into half-moons
- •4 cloves garlic, minced
- •3 tablespoons olive oil
- •2 tablespoons fresh lemon juice
- •1 teaspoon dried oregano
- •1 teaspoon dried thyme
- •to taste salt and black pepper
- •2 tablespoons fresh parsley, chopped
Directions
- 1Preheat oven to 400°F (200°C). Toss zucchini slices with 2 tablespoons olive oil, 2 minced garlic cloves, half the oregano, salt, and pepper on a baking sheet.
- 2Roast zucchini for 12-15 minutes until golden and tender.
- 3Place salmon fillets on a separate baking sheet, drizzle with remaining olive oil and lemon juice, and rub with remaining garlic, oregano, thyme, salt, and pepper.
- 4Add salmon to the oven alongside zucchini and bake for 12-15 minutes until salmon flakes easily with a fork.
- 5Transfer salmon and zucchini to serving plates, garnish with fresh parsley, and serve immediately.
