Baked Salmon with Garlic and Roasted Zucchini

Tender, flaky salmon fillets seasoned with garlic and herbs, paired with golden roasted zucchini for a healthy and elegant weeknight dinner.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 3 medium zucchini, sliced into half-moons
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt and black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

  1. 1Preheat oven to 400°F (200°C). Toss zucchini slices with 2 tablespoons olive oil, 2 minced garlic cloves, half the oregano, salt, and pepper on a baking sheet.
  2. 2Roast zucchini for 12-15 minutes until golden and tender.
  3. 3Place salmon fillets on a separate baking sheet, drizzle with remaining olive oil and lemon juice, and rub with remaining garlic, oregano, thyme, salt, and pepper.
  4. 4Add salmon to the oven alongside zucchini and bake for 12-15 minutes until salmon flakes easily with a fork.
  5. 5Transfer salmon and zucchini to serving plates, garnish with fresh parsley, and serve immediately.
