Baked Salmon with Tomato Salsa

Ingredients
- •4 fillets (6 oz each) salmon
- •2 tablespoons olive oil
- •to taste salt and pepper
- •2 cups diced tomatoes
- •1/4 cup red onion, finely diced
- •1/4 cup fresh cilantro, chopped
- •2 limes, juiced
- •1 jalapeño, minced
Directions
- 1Preheat oven to 400°F and line a baking sheet with parchment paper.
- 2Place salmon fillets on the sheet, drizzle with olive oil, and season with salt and pepper.
- 3Bake salmon for 12-15 minutes until it flakes easily with a fork.
- 4While salmon bakes, combine diced tomatoes, red onion, cilantro, jalapeño, and lime juice in a bowl. Season salsa with salt and pepper to taste.
- 5Remove salmon from oven and top each fillet generously with tomato salsa. Serve immediately.
