Baked Salmon with Tomato Salsa

Ingredients

  • 4 fillets (6 oz each) salmon
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 2 cups diced tomatoes
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 jalapeño, minced

Directions

  1. 1Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. 2Place salmon fillets on the sheet, drizzle with olive oil, and season with salt and pepper.
  3. 3Bake salmon for 12-15 minutes until it flakes easily with a fork.
  4. 4While salmon bakes, combine diced tomatoes, red onion, cilantro, jalapeño, and lime juice in a bowl. Season salsa with salt and pepper to taste.
  5. 5Remove salmon from oven and top each fillet generously with tomato salsa. Serve immediately.
