Ingredients

  • 4 fillets tilapia
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 6 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika

Directions

  1. 1Preheat oven to 400°F and bring vegetable broth to a boil in a saucepan, then add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. 2Place tilapia fillets on a baking sheet, drizzle with 1 tablespoon olive oil, season with salt, pepper, and paprika, then bake for 12-15 minutes until fish flakes easily.
  3. 3Heat 1 tablespoon olive oil in a skillet over medium heat, sauté minced garlic for 30 seconds until fragrant.
  4. 4Add fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted; season with salt and pepper to taste.
  5. 5Fluff cooked quinoa with a fork and divide among serving plates.
  6. 6Top each plate with baked tilapia and sautéed spinach, then squeeze fresh lemon juice over the fish and serve immediately.
