- •1 cup quinoa
- •2 cups vegetable broth
- •6 cups fresh spinach
- •2 cloves garlic, minced

- •¼ teaspoon black pepper
- •½ teaspoon paprika
Directions
- 1Preheat oven to 400°F and bring vegetable broth to a boil in a saucepan, then add quinoa, reduce heat, cover, and simmer for 15 minutes.
- 2Place tilapia fillets on a baking sheet, drizzle with 1 tablespoon olive oil, season with salt, pepper, and paprika, then bake for 12-15 minutes until fish flakes easily.
- 3Heat 1 tablespoon olive oil in a skillet over medium heat, sauté minced garlic for 30 seconds until fragrant.
- 4Add fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted; season with salt and pepper to taste.
- 5Fluff cooked quinoa with a fork and divide among serving plates.
- 6Top each plate with baked tilapia and sautéed spinach, then squeeze fresh lemon juice over the fish and serve immediately.
