Bakwan Sayur (Indonesian Vegetable Fritters)

Cabbage, carrot and bean sprouts held together with just enough batter, fried into lacy fritters.

Ingredients

  • 150 g all-purpose flour
  • 100 g cabbage, shredded
  • 1 carrot, julienned
  • 100 g bean sprouts
  • 2 green onions, sliced
  • 1 egg
  • 180 ml water
  • 500 ml neutral oil, for frying

Directions

  1. 1Whisk the flour, egg, water and a good pinch of salt into a batter a little thinner than pancake batter.
  2. 2Fold in the cabbage, carrot, bean sprouts and green onions. The batter should barely coat them.
  3. 3Heat the oil to 170C.
  4. 4Slide in spoonfuls, flattening each one so the edges spread and go lacy.
  5. 5Fry four minutes, turning once, until golden and crisp at the rim.
  6. 6Drain on paper and serve with sliced chili or a dipping sauce.

💡 Keep the batter mean. Enough to bind and no more is the difference between a vegetable fritter and a doughnut.
