Bakwan Sayur (Indonesian Vegetable Fritters)
Cabbage, carrot and bean sprouts held together with just enough batter, fried into lacy fritters.

Ingredients
- •150 g all-purpose flour
- •100 g cabbage, shredded
- •1 carrot, julienned
- •100 g bean sprouts
- •2 green onions, sliced
- •1 egg
- •180 ml water
- •500 ml neutral oil, for frying
Directions
- 1Whisk the flour, egg, water and a good pinch of salt into a batter a little thinner than pancake batter.
- 2Fold in the cabbage, carrot, bean sprouts and green onions. The batter should barely coat them.
- 3Heat the oil to 170C.
- 4Slide in spoonfuls, flattening each one so the edges spread and go lacy.
- 5Fry four minutes, turning once, until golden and crisp at the rim.
- 6Drain on paper and serve with sliced chili or a dipping sauce.
💡 Keep the batter mean. Enough to bind and no more is the difference between a vegetable fritter and a doughnut.
