Ingredients

  • 4 large flour tortillas
  • 2 cups refried red beans
  • 4 eggs
  • 1/2 cup crema
  • 1/2 cup queso fresco, crumbled
  • 1 avocado, sliced
  • 1 tbsp vegetable oil
  • 1/2 tsp salt

Directions

  1. 1Warm the refried red beans in a saucepan over low heat until soft and spreadable.
  2. 2Beat the eggs with salt and scramble them gently in vegetable oil until just set.
  3. 3Warm the flour tortillas in a dry skillet until soft and flexible.
  4. 4Spread each tortilla with a generous layer of warm refried beans.
  5. 5Add scrambled eggs, Mexican crema, queso fresco, and avocado to one half of each tortilla.
  6. 6Fold the tortillas in half and serve immediately while the fillings are warm.

💡 Do not overfill the tortillas; baleadas should fold easily without squeezing the beans and crema out the sides.
