Baleadas (Honduran Bean and Egg Tortillas)

Ingredients
- •4 large flour tortillas
- •2 cups refried red beans
- •4 eggs
- •1/2 cup crema
- •1/2 cup queso fresco, crumbled
- •1 avocado, sliced
- •1 tbsp vegetable oil
- •1/2 tsp salt
Directions
- 1Warm the refried red beans in a saucepan over low heat until soft and spreadable.
- 2Beat the eggs with salt and scramble them gently in vegetable oil until just set.
- 3Warm the flour tortillas in a dry skillet until soft and flexible.
- 4Spread each tortilla with a generous layer of warm refried beans.
- 5Add scrambled eggs, Mexican crema, queso fresco, and avocado to one half of each tortilla.
- 6Fold the tortillas in half and serve immediately while the fillings are warm.
💡 Do not overfill the tortillas; baleadas should fold easily without squeezing the beans and crema out the sides.
