Balila (Lebanese Warm Lemon-Cumin Chickpeas)

Lebanese warm chickpeas seasoned with garlic, cumin, lemon, olive oil, and parsley for an inexpensive breakfast or light lunch.

Ingredients

  • 2 cans (15 oz each) canned chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Place the chickpeas in a saucepan with 1/2 cup water and bring to a gentle simmer.
  2. 2Add garlic, cumin, salt, and black pepper and cook for 5 minutes.
  3. 3Drain off most of the remaining water, leaving the chickpeas moist.
  4. 4Stir in lemon juice and olive oil while the chickpeas are still hot.
  5. 5Fold in the chopped parsley.
  6. 6Serve the balila warm with extra lemon at the table if desired.

💡 Leave a spoonful of cooking liquid in the pan; completely dry chickpeas do not absorb the lemon-cumin dressing as evenly.
