Ingredients
- •2 cans (15 oz each) canned chickpeas, drained and rinsed
- •2 cloves garlic, minced
- •1 1/2 tsp ground cumin
- •3 tbsp fresh lemon juice
- •3 tbsp olive oil
- •1/4 cup fresh parsley, chopped
- •3/4 tsp salt
- •1/4 tsp black pepper
Directions
- 1Place the chickpeas in a saucepan with 1/2 cup water and bring to a gentle simmer.
- 2Add garlic, cumin, salt, and black pepper and cook for 5 minutes.
- 3Drain off most of the remaining water, leaving the chickpeas moist.
- 4Stir in lemon juice and olive oil while the chickpeas are still hot.
- 5Fold in the chopped parsley.
- 6Serve the balila warm with extra lemon at the table if desired.
💡 Leave a spoonful of cooking liquid in the pan; completely dry chickpeas do not absorb the lemon-cumin dressing as evenly.
