Bamia bi Zeit (Lebanese Okra in Tomato and Olive Oil)

Ingredients
- •1 1/2 lb okra, trimmed
- •1 medium yellow onion, diced
- •4 cloves garlic, minced
- •2 cups canned crushed tomatoes
- •1/4 cup olive oil
- •1/2 cup water
- •1 tbsp fresh lemon juice
- •1 tsp salt
- •1/4 tsp black pepper
Directions
- 1Heat half the olive oil and cook the okra for 6 minutes until lightly browned.
- 2Transfer the okra to a plate and add the remaining olive oil and onion.
- 3Cook the onion for 5 minutes, then add garlic and cook for 30 seconds.
- 4Add crushed tomatoes, water, salt, black pepper, and browned okra.
- 5Cover and simmer for 15 minutes until the okra is tender.
- 6Finish with lemon juice and serve warm or at room temperature.
