Ingredients

  • 1 1/2 lb okra, trimmed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups canned crushed tomatoes
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1 tbsp fresh lemon juice
  • 1 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Heat half the olive oil and cook the okra for 6 minutes until lightly browned.
  2. 2Transfer the okra to a plate and add the remaining olive oil and onion.
  3. 3Cook the onion for 5 minutes, then add garlic and cook for 30 seconds.
  4. 4Add crushed tomatoes, water, salt, black pepper, and browned okra.
  5. 5Cover and simmer for 15 minutes until the okra is tender.
  6. 6Finish with lemon juice and serve warm or at room temperature.
