Banana Cue (Filipino Caramelized Bananas)

Whole bananas fried in oil with brown sugar thrown in, so the sugar caramelises onto them in a brittle shell.

Ingredients

  • 8 small firm bananas
  • 120 g brown sugar
  • 500 ml neutral oil, for frying

Directions

  1. 1Peel the bananas and leave them whole. They must be firm, not soft and ripe.
  2. 2Heat the oil in a deep pan over medium heat.
  3. 3Add the bananas and scatter the brown sugar directly into the oil around them.
  4. 4Let the sugar melt and darken without stirring, spooning the hot oil over the bananas.
  5. 5Cook five minutes, turning once, until each banana wears a dark brittle coat.
  6. 6Lift onto skewers and cool five minutes so the caramel sets hard.

💡 The sugar goes into the oil, not onto the bananas. Coating them first just burns the sugar before the fruit heats through.
