Banana Cue (Filipino Caramelized Bananas)
Whole bananas fried in oil with brown sugar thrown in, so the sugar caramelises onto them in a brittle shell.

Ingredients
- •8 small firm bananas
- •120 g brown sugar
- •500 ml neutral oil, for frying
Directions
- 1Peel the bananas and leave them whole. They must be firm, not soft and ripe.
- 2Heat the oil in a deep pan over medium heat.
- 3Add the bananas and scatter the brown sugar directly into the oil around them.
- 4Let the sugar melt and darken without stirring, spooning the hot oil over the bananas.
- 5Cook five minutes, turning once, until each banana wears a dark brittle coat.
- 6Lift onto skewers and cool five minutes so the caramel sets hard.
💡 The sugar goes into the oil, not onto the bananas. Coating them first just burns the sugar before the fruit heats through.
