Banana Sushi Snack
A playful, no-cook snack that kids absolutely love making themselves — whole bananas slathered in nut butter, rolled in toppings, and sliced into adorable sushi-style coins. It looks impressive, takes five minutes, and is genuinely nutritious.
⏱ 10 minServes 4American
Ingredients
- •4 ripe but firm bananas
- •0.5 cup peanut butter or almond butter, smooth
- •0.25 cup mini chocolate chips
- •0.25 cup granola
- •2 tbsp honey
- •0.25 cup shredded sweetened coconut
- •2 tbsp rainbow sprinkles (optional)
- •1 tbsp chia seeds or hemp hearts (optional)
Directions
- 1Peel each banana and lay flat on a plate or sheet of wax paper.
- 2Use a butter knife or spoon to spread a generous, even layer of nut butter all over the outside of each banana.
- 3Pour toppings into separate shallow dishes and set them out as a topping bar: chocolate chips, granola, coconut, sprinkles, and seeds.
- 4Roll each coated banana through your chosen toppings, pressing gently so they adhere, then drizzle with honey.
- 5Slice each banana crosswise into 1-inch rounds using a sharp knife to create the sushi-style coins.
- 6Arrange on a plate and serve immediately.
💡 For a nut-free school-safe version, sunflower seed butter (SunButter, available at most Canadian grocery stores) works perfectly and kids often can't tell the difference. Bananas are best prepared right before eating as they brown quickly — but the toppings can be prepped and set out ahead of time to speed things up.
