Bandeja Paisa
A hearty Colombian platter loaded with beans, rice, meat, and fried sides that's perfect for a satisfying lunch.

Ingredients
- •1 cup red beans
- •1 cup white rice
- •2 tablespoons vegetable oil
- •2 cloves garlic, minced
- •1/2 pound ground beef
- •2 plantains, peeled and sliced
- •2 corn arepas
- •2 eggs
- •1/4 pound chorizo, sliced
- •2 slices fresh cheese (queso fresco)
- •1/2 avocado sliced
- •to taste salt and pepper
Directions
- 1Cook the red beans in salted water for 45 minutes until tender, then season with garlic and salt.
- 2Cook the rice in 2 cups of water for 18-20 minutes until fluffy.
- 3Fry the plantain slices in oil until golden, about 8 minutes, and set aside.
- 4Brown the ground beef with garlic in a skillet, season with salt and pepper, then set aside.
- 5Fry the chorizo slices until cooked, about 5 minutes, then remove.
- 6Fry the arepas until golden on both sides, about 4 minutes.
- 7Fry the eggs sunny-side up and set aside.
- 8Arrange all components on a large plate: beans on one side, rice on another, then top with beef, chorizo, fried plantains, arepa, fried egg, cheese, and avocado.
