Bannock with Smoked Salmon and Cucumber

Ingredients
- •2 cups all-purpose flour
- •2 tsp baking powder
- •1 tsp salt
- •3/4 cup water
- •2 tbsp vegetable oil
- •6 oz cream cheese
- •8 oz smoked salmon
- •1/2 cucumber, thinly sliced
- •2 tbsp fresh dill, chopped
- •1 tbsp fresh lemon juice
Directions
- 1Mix flour, baking powder, salt, water, and vegetable oil into a soft dough.
- 2Shape into four rounds and cook in a lightly oiled skillet for 4–5 minutes per side.
- 3Cool the bannock rounds for 10 minutes.
- 4Stir cream cheese with dill and lemon juice.
- 5Spread the cooled bannock with dill cream cheese and top with smoked salmon and cucumber.
- 6Serve open-faced or fold for packing.
