Bannock with Smoked Salmon and Cucumber

Canadian bannock topped with smoked salmon, cucumber, dill, and lemony cream cheese for a cold packed lunch.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup water
  • 2 tbsp vegetable oil
  • 6 oz cream cheese
  • 8 oz smoked salmon
  • 1/2 cucumber, thinly sliced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice

Directions

  1. 1Mix flour, baking powder, salt, water, and vegetable oil into a soft dough.
  2. 2Shape into four rounds and cook in a lightly oiled skillet for 4–5 minutes per side.
  3. 3Cool the bannock rounds for 10 minutes.
  4. 4Stir cream cheese with dill and lemon juice.
  5. 5Spread the cooled bannock with dill cream cheese and top with smoked salmon and cucumber.
  6. 6Serve open-faced or fold for packing.
