Ingredients

  • 2 lb yellow potatoes, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1 tsp red pepper flakes
  • 1 tsp ground coriander
  • 2 tbsp fresh lemon juice
  • 1 tsp salt

Directions

  1. 1Toss the potato cubes with half the olive oil and salt.
  2. 2Roast at 450°F (230°C) for 22–25 minutes until browned and crisp at the edges.
  3. 3Heat the remaining olive oil in a skillet and cook garlic for 30 seconds.
  4. 4Add cilantro, red pepper flakes, and ground coriander and stir for another 30 seconds.
  5. 5Add the roasted potatoes to the skillet and toss thoroughly with the spicy garlic mixture.
  6. 6Remove from heat, add lemon juice, and serve hot.

💡 Add lemon only after the potatoes leave the heat; early acidity softens the crisp exterior you worked to build.
