Ingredients
- •2 lb yellow potatoes, cut into 1-inch cubes
- •1/4 cup olive oil
- •4 cloves garlic, minced
- •1/2 cup fresh cilantro, chopped
- •1 tsp red pepper flakes
- •1 tsp ground coriander
- •2 tbsp fresh lemon juice
- •1 tsp salt
Directions
- 1Toss the potato cubes with half the olive oil and salt.
- 2Roast at 450°F (230°C) for 22–25 minutes until browned and crisp at the edges.
- 3Heat the remaining olive oil in a skillet and cook garlic for 30 seconds.
- 4Add cilantro, red pepper flakes, and ground coriander and stir for another 30 seconds.
- 5Add the roasted potatoes to the skillet and toss thoroughly with the spicy garlic mixture.
- 6Remove from heat, add lemon juice, and serve hot.
💡 Add lemon only after the potatoes leave the heat; early acidity softens the crisp exterior you worked to build.
