BBQ Ground Beef and Broccoli Rice Skillet
A hearty, saucy one-pan meal loaded with seasoned beef, tender broccoli, and fluffy rice that meal-preps beautifully for the whole week — we swapped pearl barley (not on hand) for jasmine rice, which kids tend to love just as much.

Ingredients
- •1.5 lbs ground beef
- •1.5 cups jasmine rice, rinsed
- •3 cups chicken broth
- •2 cups broccoli, chopped into small florets
- •1 medium yellow bell pepper, diced
- •1/3 cup brown sugar
- •3 tablespoons salsa
- •1 teaspoon smoked paprika

Directions
- 1Brown ground beef in a large deep skillet over medium-high heat; season with salt, pepper, and smoked paprika.
- 2Drain excess fat, leaving about one tablespoon in the skillet.
- 3Stir in brown sugar and salsa; cook 2 minutes until beef is nicely glazed.
- 4Add diced yellow bell pepper; sauté 2 minutes until slightly softened.
- 5Pour in chicken broth and rinsed jasmine rice; stir well to combine everything.
- 6Bring to a boil, then reduce heat to low, cover tightly, and simmer 15 minutes.
- 7Scatter broccoli florets over the top, re-cover, and cook 5 more minutes until tender.
- 8Fluff rice with a fork, stir everything together, and serve hot.
