A hearty, saucy one-pan meal loaded with seasoned beef, tender broccoli, and fluffy rice that meal-preps beautifully for the whole week — we swapped pearl barley (not on hand) for jasmine rice, which kids tend to love just as much.

Ingredients

  • 1.5 lbs ground beef
  • 1.5 cups jasmine rice, rinsed
  • 3 cups chicken broth
  • 2 cups broccoli, chopped into small florets
  • 1 medium yellow bell pepper, diced
  • 1/3 cup brown sugar
  • 3 tablespoons salsa
  • 1 teaspoon smoked paprika

Directions

  1. 1Brown ground beef in a large deep skillet over medium-high heat; season with salt, pepper, and smoked paprika.
  2. 2Drain excess fat, leaving about one tablespoon in the skillet.
  3. 3Stir in brown sugar and salsa; cook 2 minutes until beef is nicely glazed.
  4. 4Add diced yellow bell pepper; sauté 2 minutes until slightly softened.
  5. 5Pour in chicken broth and rinsed jasmine rice; stir well to combine everything.
  6. 6Bring to a boil, then reduce heat to low, cover tightly, and simmer 15 minutes.
  7. 7Scatter broccoli florets over the top, re-cover, and cook 5 more minutes until tender.
  8. 8Fluff rice with a fork, stir everything together, and serve hot.
