Ingredients

  • 1.5 lb pork tenderloin
  • 1/3 cup barbecue sauce
  • 2 tbsp maple syrup
  • 2 tbsp dill, fresh, chopped
  • 3 shallots, halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Preheat oven to 425°F and line a baking sheet with foil.
  2. 2Pat pork dry, rub all over with olive oil, salt, and pepper.
  3. 3Stir barbecue sauce and maple syrup together in a small bowl.
  4. 4Place tenderloin and shallots on the baking sheet.
  5. 5Brush pork generously with half the glaze.
  6. 6Roast 20 minutes, then brush on remaining glaze and roast 8 more minutes.
  7. 7Rest pork 5 minutes, then slice into medallions.
  8. 8Scatter fresh dill over sliced pork and serve with roasted shallots.
