Bean Burrito

Warm flour tortillas stuffed with seasoned beans, cheese, and toppings for a quick and satisfying weeknight meal.

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup cooked rice
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1 cup shredded lettuce
  • 1 diced tomato

Directions

  1. 1Heat the drained beans in a large skillet over medium heat with cumin, chili powder, and salt, stirring occasionally for 5 minutes until warmed through.
  2. 2Warm the flour tortillas in a dry skillet or directly over a flame for about 30 seconds per side until pliable.
  3. 3Lay a tortilla flat and spread 1/4 cup of the seasoned beans down the center, leaving 2 inches on each end.
  4. 4Top the beans with rice, cheese, lettuce, and tomato, using about 1/4 cup of each ingredient per burrito.
  5. 5Fold the sides of the tortilla inward, then roll tightly from bottom to top, keeping the filling contained.
  6. 6Place seam-side down on a plate and repeat with remaining tortillas and fillings.
  7. 7Serve immediately with salsa and sour cream on the side for dipping.
