Beef and Cheddar Panini
A warm, crispy sandwich filled with seasoned roast beef, melted sharp cheddar, caramelized onions, and tangy horseradish cream.

Ingredients
- •4 slices sourdough bread
- •8 oz thinly sliced roast beef
- •4 slices sharp cheddar cheese
- •1 medium onion, sliced
- •3 tablespoons butter, divided
- •3 tablespoons mayonnaise
- •1 tablespoon prepared horseradish
- •1 teaspoon salt and pepper
- •2 tablespoons beef broth
Directions
- 1Heat 1 tablespoon butter in a skillet over medium heat and cook sliced onions with salt and pepper for 8-10 minutes until golden and caramelized, adding beef broth halfway through.
- 2Mix mayonnaise with horseradish in a small bowl and spread on two slices of bread.
- 3Layer roast beef, caramelized onions, and cheddar cheese on the horseradish-mayo spread, then top with remaining bread slices.
- 4Heat a panini press or skillet over medium heat and butter the outside of each sandwich generously.
- 5Cook each panini for 3-4 minutes per side until the bread is golden and the cheese is melted, pressing gently if using a skillet.
- 6Remove from heat and let cool for 1 minute, then slice diagonally and serve immediately.
