Beef Empanadas

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold butter, cubed
  • 1 egg yolk egg yolk
  • 4-5 tablespoons ice water
  • 1 pound ground beef
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 cup green olives, chopped
  • 2 hard-boiled eggs, chopped
  • 1 egg egg, beaten (for egg wash)

Directions

  1. 1Make the dough: Mix flour and salt, cut in cold butter until breadcrumb texture forms, then add egg yolk and ice water until dough comes together. Chill for 30 minutes.
  2. 2Prepare the filling: Brown ground beef in a skillet, add diced onion and garlic, cook until softened. Season with cumin, salt, and pepper. Stir in olives and chopped hard-boiled eggs. Cool completely.
  3. 3Roll out dough between two sheets of parchment paper to about 1/8-inch thickness. Cut into 3-inch rounds using a cup or biscuit cutter.
  4. 4Place 1 tablespoon of filling on each dough round, fold into a half-moon, and press edges firmly with a fork to seal.
  5. 5Arrange empanadas on greased baking sheets, brush tops with beaten egg wash.
  6. 6Bake at 375°F for 20-25 minutes until golden brown. Let cool for 5 minutes before serving.
