Beef Kofta with Rice

Aromatic grilled ground beef kebabs infused with spices, herbs, and onions, served alongside fluffy seasoned rice.

Ingredients

  • 1.5 lbs ground beef
  • 1 medium onion, finely minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1.5 cups long-grain rice
  • 3 cups beef or chicken broth
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges

Directions

  1. 1Mix ground beef, minced onion, parsley, mint, cumin, coriander, cayenne pepper, and salt in a bowl until combined. Divide into 12 portions and mold onto skewers, pressing firmly.
  2. 2Heat olive oil in a large pan over medium-high heat. Grill kofta for 8-10 minutes, turning occasionally, until cooked through.
  3. 3In a separate pot, rinse rice under cold water. Heat 1 tbsp olive oil and lightly toast rice for 1-2 minutes.
  4. 4Add broth to the rice, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until tender.
  5. 5Fluff rice with a fork and serve alongside kofta with lemon wedges on the side.
