Beef Pot Pie

Ingredients
- •2 tablespoons butter
- •2 pounds beef chuck, cubed
- •1 medium onion, diced
- •3 cloves garlic, minced
- •3 cups beef broth
- •2 cups mixed vegetables (carrots, peas, potatoes)
- •2 tablespoons flour
- •1 teaspoon dried thyme
- •to taste salt and pepper
- •1 sheet puff pastry, thawed
Directions
- 1Melt butter in a large pot and brown the beef on all sides; remove and set aside.
- 2Sauté onion and garlic until softened, then sprinkle flour over and stir for 1 minute.
- 3Add beef broth and thyme, return beef to pot, and simmer for 45 minutes until beef is tender.
- 4Stir in mixed vegetables and simmer for 10 more minutes; season with salt and pepper.
- 5Transfer filling to a baking dish, top with puff pastry, and cut vents in the top.
- 6Bake at 400°F for 20-25 minutes until the crust is golden brown and filling bubbles at edges.
