Beef Pot Pie

Ingredients

  • 2 tablespoons butter
  • 2 pounds beef chuck, cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups mixed vegetables (carrots, peas, potatoes)
  • 2 tablespoons flour
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 1 sheet puff pastry, thawed

Directions

  1. 1Melt butter in a large pot and brown the beef on all sides; remove and set aside.
  2. 2Sauté onion and garlic until softened, then sprinkle flour over and stir for 1 minute.
  3. 3Add beef broth and thyme, return beef to pot, and simmer for 45 minutes until beef is tender.
  4. 4Stir in mixed vegetables and simmer for 10 more minutes; season with salt and pepper.
  5. 5Transfer filling to a baking dish, top with puff pastry, and cut vents in the top.
  6. 6Bake at 400°F for 20-25 minutes until the crust is golden brown and filling bubbles at edges.
