Beef Tacos al Pastor

Ingredients
- •1.5 lbs beef sirloin, thinly sliced
- •1/4 cup pineapple juice
- •3 tbsp white vinegar
- •2 tbsp olive oil
- •2 tsp cumin
- •1 tsp dried oregano
- •1/2 tsp chili powder
- •3 cloves garlic, minced
- •1 cup fresh pineapple, diced
- •8 corn tortillas
- •1/4 cup fresh cilantro
- •1 onion, finely diced
Directions
- 1Mix pineapple juice, vinegar, olive oil, cumin, oregano, chili powder, and garlic in a bowl.
- 2Add sliced beef to the marinade and refrigerate for at least 15 minutes.
- 3Heat a large skillet over medium-high heat and cook the marinated beef for 5-7 minutes until browned.
- 4Add diced pineapple to the skillet and cook for 2 minutes until caramelized.
- 5Warm tortillas in a separate pan for 30 seconds per side.
- 6Fill each tortilla with beef mixture and top with diced onion and fresh cilantro.
- 7Serve immediately with lime wedges and your favorite salsa.
