Beef Tacos al Pastor

Ingredients

  • 1.5 lbs beef sirloin, thinly sliced
  • 1/4 cup pineapple juice
  • 3 tbsp white vinegar
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 3 cloves garlic, minced
  • 1 cup fresh pineapple, diced
  • 8 corn tortillas
  • 1/4 cup fresh cilantro
  • 1 onion, finely diced

Directions

  1. 1Mix pineapple juice, vinegar, olive oil, cumin, oregano, chili powder, and garlic in a bowl.
  2. 2Add sliced beef to the marinade and refrigerate for at least 15 minutes.
  3. 3Heat a large skillet over medium-high heat and cook the marinated beef for 5-7 minutes until browned.
  4. 4Add diced pineapple to the skillet and cook for 2 minutes until caramelized.
  5. 5Warm tortillas in a separate pan for 30 seconds per side.
  6. 6Fill each tortilla with beef mixture and top with diced onion and fresh cilantro.
  7. 7Serve immediately with lime wedges and your favorite salsa.
