Beef Tagine with Almonds
Tender beef braised in warm spices with sweet almonds and apricots, served over fluffy couscous.

Ingredients
- •2 lbs beef chuck, cut into 2-inch cubes
- •3 tablespoons olive oil
- •2 onions, sliced
- •4 cloves garlic, minced
- •2 teaspoons ground ginger
- •1 teaspoon ground cumin
- •1 teaspoon ground cinnamon
- •1 cup beef broth
- •1/2 cup dried apricots
- •3/4 cup whole almonds, toasted
- •to taste salt and pepper
Directions
- 1Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides, about 8 minutes total. Remove and set aside.
- 2In the same pot, sauté onions until softened, about 5 minutes. Add garlic, ginger, cumin, and cinnamon, stirring for 1 minute until fragrant.
- 3Return beef to pot and pour in beef broth. Add apricots, bring to a simmer, then reduce heat to low. Cover and cook for 60-70 minutes until beef is tender.
- 4Stir in toasted almonds and simmer uncovered for 5 minutes. Taste and adjust seasoning with salt and pepper.
- 5Serve hot over couscous or with crusty bread.
