Beef Tagine with Almonds

Tender beef braised in warm spices with sweet almonds and apricots, served over fluffy couscous.

Ingredients

  • 2 lbs beef chuck, cut into 2-inch cubes
  • 3 tablespoons olive oil
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 cup beef broth
  • 1/2 cup dried apricots
  • 3/4 cup whole almonds, toasted
  • to taste salt and pepper

Directions

  1. 1Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides, about 8 minutes total. Remove and set aside.
  2. 2In the same pot, sauté onions until softened, about 5 minutes. Add garlic, ginger, cumin, and cinnamon, stirring for 1 minute until fragrant.
  3. 3Return beef to pot and pour in beef broth. Add apricots, bring to a simmer, then reduce heat to low. Cover and cook for 60-70 minutes until beef is tender.
  4. 4Stir in toasted almonds and simmer uncovered for 5 minutes. Taste and adjust seasoning with salt and pepper.
  5. 5Serve hot over couscous or with crusty bread.
