Beef Tendon Braised in Soy

Tender, gelatinous beef tendon glazed in a savory-sweet soy sauce with aromatic spices and aromatics.

Ingredients

  • 2 lbs beef tendon, cleaned and cut into 2-inch pieces
  • 1/2 cup soy sauce
  • 3 tbsp dark soy sauce
  • 2 tbsp sugar
  • 4 slices ginger
  • 6 cloves garlic, smashed
  • 3 stalks scallions, cut into 2-inch pieces
  • 1 1-inch piece cinnamon stick
  • 6 cups water or beef stock
  • 2 tbsp vegetable oil
  • 1 tbsp rice wine or dry sherry

Directions

  1. 1Blanch beef tendon in boiling water for 10 minutes, drain and rinse until clean.
  2. 2Heat oil in a large pot or Dutch oven over medium-high heat, add ginger and garlic, stir-fry until fragrant.
  3. 3Add beef tendon and stir-fry for 3-4 minutes until lightly browned.
  4. 4Pour in soy sauce, dark soy sauce, rice wine, sugar, and stock; add star anise and cinnamon stick.
  5. 5Bring to a boil, then reduce heat to low, cover and simmer for 2-2.5 hours until tendon is very tender.
  6. 6Add scallions and simmer uncovered for 10 more minutes to reduce and thicken the sauce.
  7. 7Taste and adjust seasoning with soy sauce or sugar as needed, then serve over rice.
