Beef Tendon Braised in Soy
Tender, gelatinous beef tendon glazed in a savory-sweet soy sauce with aromatic spices and aromatics.

Ingredients
- •2 lbs beef tendon, cleaned and cut into 2-inch pieces
- •1/2 cup soy sauce
- •3 tbsp dark soy sauce
- •2 tbsp sugar
- •4 slices ginger
- •6 cloves garlic, smashed
- •3 stalks scallions, cut into 2-inch pieces
- •1 1-inch piece cinnamon stick
- •6 cups water or beef stock
- •2 tbsp vegetable oil
- •1 tbsp rice wine or dry sherry
Directions
- 1Blanch beef tendon in boiling water for 10 minutes, drain and rinse until clean.
- 2Heat oil in a large pot or Dutch oven over medium-high heat, add ginger and garlic, stir-fry until fragrant.
- 3Add beef tendon and stir-fry for 3-4 minutes until lightly browned.
- 4Pour in soy sauce, dark soy sauce, rice wine, sugar, and stock; add star anise and cinnamon stick.
- 5Bring to a boil, then reduce heat to low, cover and simmer for 2-2.5 hours until tendon is very tender.
- 6Add scallions and simmer uncovered for 10 more minutes to reduce and thicken the sauce.
- 7Taste and adjust seasoning with soy sauce or sugar as needed, then serve over rice.
