Beet Cake

Ingredients
- •1 cup cooked, grated beets
- •1 3/4 cups all-purpose flour
- •3/4 cup unsweetened cocoa powder
- •1 1/2 cups granulated sugar
- •2 large eggs
- •1/2 cup vegetable oil
- •1 cup strong brewed coffee, cooled
- •2 teaspoons baking soda
- •1/2 teaspoon salt
- •1/2 cup butter
- •2/3 cup cocoa powder
- •3 cups powdered sugar
Directions
- 1Preheat oven to 350°F and grease a 9-inch round cake pan.
- 2Whisk together flour, cocoa powder, sugar, baking soda, and salt in a large bowl.
- 3In another bowl, beat eggs with oil, then stir in grated beets and cooled coffee.
- 4Combine wet and dry ingredients until just blended, then pour into prepared pan.
- 5Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
- 6Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
- 7Beat softened butter with cocoa powder and powdered sugar to make frosting, then spread over cooled cake.
