Bell Pepper Salad

Ingredients
- •3 large bell peppers (red, yellow, and orange)
- •1/4 cup extra virgin olive oil
- •2 tablespoons red wine vinegar
- •2 cloves garlic, minced
- •1/4 cup red onion, thinly sliced
- •1/4 cup fresh parsley, chopped
- •2 tablespoons capers
- •1/4 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Roast bell peppers over an open flame or under the broiler for 10-12 minutes, turning occasionally, until charred on all sides.
- 2Place roasted peppers in a bowl, cover with plastic wrap, and let steam for 5 minutes to loosen the skin.
- 3Peel off the charred skin, remove seeds, and slice peppers into strips.
- 4In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper to make the vinaigrette.
- 5In a large bowl, combine bell pepper strips, red onion, capers, and fresh parsley.
- 6Pour vinaigrette over the salad and toss gently to coat evenly.
- 7Let salad sit for 5 minutes before serving to allow flavors to meld together.
