Bhindi Fry

Crispy fried okra coated in aromatic spices, a beloved Indian side dish that's perfectly tender inside and delightfully crunchy outside.

Ingredients

  • 500g okra (bhindi), washed and dried
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon asafetida (hing)
  • 1/2 teaspoon amchur powder (dried mango powder)
  • to taste salt
  • 1 tablespoon gram flour (besan)
  • 1 medium onion, finely chopped

Directions

  1. 1Trim the okra ends and cut into 2-inch pieces, then spread on a cloth to dry completely for 10 minutes.
  2. 2Heat oil in a large skillet over medium-high heat and add cumin seeds, letting them crackle for 30 seconds.
  3. 3Add chopped onions and sauté until golden brown, about 3 minutes.
  4. 4Add the okra pieces and stir-fry for 3-4 minutes until they start to soften slightly.
  5. 5Sprinkle turmeric, coriander powder, red chili powder, and asafetida, stirring constantly for 1 minute.
  6. 6Add gram flour and amchur powder, mixing well to coat all okra pieces evenly.
  7. 7Continue frying for 5-7 minutes, stirring occasionally, until the okra becomes crispy and golden brown.
  8. 8Taste and adjust seasoning with salt, then transfer to a serving plate and enjoy warm.
