Bhindi Fry
Crispy fried okra coated in aromatic spices, a beloved Indian side dish that's perfectly tender inside and delightfully crunchy outside.

Ingredients
- •500g okra (bhindi), washed and dried
- •2 tablespoons vegetable oil
- •1 teaspoon cumin seeds
- •1 teaspoon coriander powder
- •1/2 teaspoon turmeric powder
- •1/2 teaspoon red chili powder
- •1/4 teaspoon asafetida (hing)
- •1/2 teaspoon amchur powder (dried mango powder)
- •to taste salt
- •1 tablespoon gram flour (besan)
- •1 medium onion, finely chopped
Directions
- 1Trim the okra ends and cut into 2-inch pieces, then spread on a cloth to dry completely for 10 minutes.
- 2Heat oil in a large skillet over medium-high heat and add cumin seeds, letting them crackle for 30 seconds.
- 3Add chopped onions and sauté until golden brown, about 3 minutes.
- 4Add the okra pieces and stir-fry for 3-4 minutes until they start to soften slightly.
- 5Sprinkle turmeric, coriander powder, red chili powder, and asafetida, stirring constantly for 1 minute.
- 6Add gram flour and amchur powder, mixing well to coat all okra pieces evenly.
- 7Continue frying for 5-7 minutes, stirring occasionally, until the okra becomes crispy and golden brown.
- 8Taste and adjust seasoning with salt, then transfer to a serving plate and enjoy warm.
