Bhindi Masala

Crispy-fried okra tossed with aromatic spices and caramelized onions in this beloved Indian vegetarian side dish.

Ingredients

  • 500g fresh okra (bhindi), trimmed and halved lengthwise
  • 3 tablespoons vegetable oil
  • 2 medium onions, finely sliced
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon amchur (dried mango powder)
  • 1/2 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, chopped
  • salt to taste salt

Directions

  1. 1Pat the okra dry with a cloth to remove moisture, which helps prevent stickiness during cooking.
  2. 2Heat oil in a large pan over medium-high heat and add cumin seeds; let them crackle for 30 seconds.
  3. 3Add the sliced onions and cook for 5-7 minutes, stirring occasionally, until they turn golden brown.
  4. 4Stir in ginger-garlic paste and green chilies, cooking for 1 minute until fragrant.
  5. 5Add the okra to the pan and stir well to coat with oil; cook for 3-4 minutes on high heat.
  6. 6Reduce heat to medium and add coriander powder, turmeric, red chili powder, and amchur; mix thoroughly.
  7. 7Continue cooking for 8-10 minutes, stirring frequently, until the okra is tender and the edges are slightly crispy.
  8. 8Taste and adjust seasoning with salt; garnish with fresh cilantro and serve hot.
