Bhindi Masala
Crispy-fried okra tossed with aromatic spices and caramelized onions in this beloved Indian vegetarian side dish.

Ingredients
- •500g fresh okra (bhindi), trimmed and halved lengthwise
- •3 tablespoons vegetable oil
- •2 medium onions, finely sliced
- •2 tablespoons ginger-garlic paste
- •2 green chilies, finely chopped
- •1 teaspoon cumin seeds
- •1 teaspoon coriander powder
- •1/2 teaspoon turmeric powder
- •1 teaspoon amchur (dried mango powder)
- •1/2 teaspoon red chili powder
- •2 tablespoons fresh cilantro, chopped
- •salt to taste salt
Directions
- 1Pat the okra dry with a cloth to remove moisture, which helps prevent stickiness during cooking.
- 2Heat oil in a large pan over medium-high heat and add cumin seeds; let them crackle for 30 seconds.
- 3Add the sliced onions and cook for 5-7 minutes, stirring occasionally, until they turn golden brown.
- 4Stir in ginger-garlic paste and green chilies, cooking for 1 minute until fragrant.
- 5Add the okra to the pan and stir well to coat with oil; cook for 3-4 minutes on high heat.
- 6Reduce heat to medium and add coriander powder, turmeric, red chili powder, and amchur; mix thoroughly.
- 7Continue cooking for 8-10 minutes, stirring frequently, until the okra is tender and the edges are slightly crispy.
- 8Taste and adjust seasoning with salt; garnish with fresh cilantro and serve hot.
