Bisi Bele Bath
A vibrant, aromatic one-pot rice and lentil dish loaded with vegetables, spices, and peanuts from South India.

Ingredients
- •1 cup basmati rice
- •1/2 cup toor dal (split pigeon peas)
- •2 tablespoons roasted peanuts
- •1 cup mixed vegetables (carrots, green beans, peas, potato)
- •2 tablespoons ghee
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •2 dried red chilies
- •1 tablespoon bisi bele bath spice powder
- •1/4 teaspoon turmeric powder
- •salt to taste salt
- •3.5 cups water
Directions
- 1Rinse rice and toor dal separately under cold water and set aside.
- 2Heat ghee in a pot and add mustard seeds, cumin seeds, and dried red chilies; let them splutter for 30 seconds.
- 3Add the mixed vegetables and peanuts, sauté for 2-3 minutes until fragrant.
- 4Add the rinsed rice and dal to the pot, stir well to combine with the ghee and spices.
- 5Add turmeric powder, bisi bele bath spice powder, salt, and 3.5 cups of water; bring to a boil.
- 6Reduce heat to low, cover with a lid, and simmer for 20-25 minutes until rice and dal are fully cooked and water is absorbed.
- 7Fluff with a fork and serve hot with pickle or yogurt on the side.
