Bissara (Moroccan Fava Bean Soup)

Ingredients

  • 2 cups dried split fava beans, rinsed
  • 5 cloves garlic, smashed
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1/4 cup olive oil
  • 7 cups water
  • 1 1/2 tsp salt
  • 2 tbsp fresh lemon juice
  • 1/2 tsp red pepper flakes

Directions

  1. 1Combine fava beans, garlic, half the cumin, water, and salt in a large pot.
  2. 2Bring to a boil, reduce to a simmer, and cook 40–45 minutes until the beans collapse easily.
  3. 3Blend the soup until completely smooth, adding a splash of water if it is too thick.
  4. 4Return the bissara to low heat and stir in lemon juice.
  5. 5Mix the remaining cumin, paprika, red pepper flakes, and olive oil in a small bowl.
  6. 6Ladle the soup into bowls and spoon the spiced oil over each serving.

💡 Split fava beans should become completely soft before blending; undercooked beans leave the soup grainy rather than velvety.
