Bistek Encebollado

Ingredients
- •1.5 lbs beef sirloin or flank steak
- •4 large yellow onions
- •3 cloves garlic
- •1 can (8 oz) tomato sauce
- •2 tbsp olive oil
- •1 tsp cumin
- •1/2 tsp black pepper
- •1 tsp salt
- •1/2 cup beef broth
- •2 tbsp vinegar
Directions
- 1Slice the beef thinly against the grain and season with salt and pepper.
- 2Heat olive oil in a large skillet over medium-high heat and sear the beef until browned on both sides, about 3-4 minutes total; set aside.
- 3In the same skillet, slice and add the onions, cooking over medium heat until golden and caramelized, about 10 minutes.
- 4Add minced garlic and cumin, stirring constantly for 1 minute until fragrant.
- 5Pour in the tomato sauce, beef broth, and vinegar, then return the beef to the skillet.
- 6Reduce heat to low and simmer for 15-20 minutes until the sauce thickens and flavors meld.
- 7Taste and adjust seasonings as needed, then serve hot over white rice.
