Bistek Encebollado

Ingredients

  • 1.5 lbs beef sirloin or flank steak
  • 4 large yellow onions
  • 3 cloves garlic
  • 1 can (8 oz) tomato sauce
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 cup beef broth
  • 2 tbsp vinegar

Directions

  1. 1Slice the beef thinly against the grain and season with salt and pepper.
  2. 2Heat olive oil in a large skillet over medium-high heat and sear the beef until browned on both sides, about 3-4 minutes total; set aside.
  3. 3In the same skillet, slice and add the onions, cooking over medium heat until golden and caramelized, about 10 minutes.
  4. 4Add minced garlic and cumin, stirring constantly for 1 minute until fragrant.
  5. 5Pour in the tomato sauce, beef broth, and vinegar, then return the beef to the skillet.
  6. 6Reduce heat to low and simmer for 15-20 minutes until the sauce thickens and flavors meld.
  7. 7Taste and adjust seasonings as needed, then serve hot over white rice.
