Bitter Leaf Soup

Ingredients
- •500g beef or goat meat, cubed
- •3 cups fresh bitter leaf, chopped
- •2 tablespoons palm oil
- •1 medium onion, chopped
- •4 cloves garlic, minced
- •2 teaspoons ground crayfish
- •1 teaspoon cayenne pepper
- •6 cups beef or vegetable broth
- •2 Maggi cubes or bouillon cubes
- •1 teaspoon salt
Directions
- 1Heat palm oil in a large pot over medium-high heat and sauté onion and garlic until fragrant.
- 2Add cubed meat and brown on all sides, about 5 minutes.
- 3Pour in broth and bring to a boil, then reduce heat and simmer for 15 minutes.
- 4Add bouillon cubes, crayfish powder, cayenne pepper, and salt to taste.
- 5Stir in bitter leaf and simmer for 10 minutes until wilted and tender.
- 6Taste and adjust seasonings as needed, then serve hot with fufu, pounded yam, or rice.
