Bitter Leaf Soup

Ingredients

  • 500g beef or goat meat, cubed
  • 3 cups fresh bitter leaf, chopped
  • 2 tablespoons palm oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground crayfish
  • 1 teaspoon cayenne pepper
  • 6 cups beef or vegetable broth
  • 2 Maggi cubes or bouillon cubes
  • 1 teaspoon salt

Directions

  1. 1Heat palm oil in a large pot over medium-high heat and sauté onion and garlic until fragrant.
  2. 2Add cubed meat and brown on all sides, about 5 minutes.
  3. 3Pour in broth and bring to a boil, then reduce heat and simmer for 15 minutes.
  4. 4Add bouillon cubes, crayfish powder, cayenne pepper, and salt to taste.
  5. 5Stir in bitter leaf and simmer for 10 minutes until wilted and tender.
  6. 6Taste and adjust seasonings as needed, then serve hot with fufu, pounded yam, or rice.
