Ingredients

  • •2 potatoes, diced small
  • •1 can black beans, drained and rinsed
  • •4 flour tortillas
  • •1 cup cheddar cheese, shredded
  • •1/2 cup salsa
  • •1 tsp smoked paprika
  • •2 tbsp olive oil

Directions

  1. 1Fry diced potatoes in olive oil over medium-high heat 10 minutes.
  2. 2Season potatoes with smoked paprika, salt, and pepper.
  3. 3Add black beans to skillet, stir and heat through 3 minutes.
  4. 4Warm tortillas in a dry pan for 30 seconds each.
  5. 5Fill tortillas with potato-bean mixture and cheddar cheese.
  6. 6Roll up burritos and serve with salsa on the side.

💡 Par-cook diced potatoes until just tender for breakfast burritos; raw potatoes take too long and fully cooked soft potatoes can mash during rolling.
