Black Bean Burger

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1/2 cup panko breadcrumbs
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 burger buns
  • as needed toppings (lettuce, tomato, avocado, salsa)

Directions

  1. 1Mash the black beans in a large bowl until mostly broken down but still slightly chunky.
  2. 2Stir in panko, red onion, cilantro, garlic, egg, cumin, chili powder, salt, and pepper until combined.
  3. 3Form mixture into 4 patties about 3/4-inch thick.
  4. 4Heat olive oil in a large skillet over medium-high heat.
  5. 5Cook patties for 4-5 minutes per side until golden brown and crispy.
  6. 6Toast burger buns lightly in the skillet if desired.
  7. 7Assemble burgers with patties and desired toppings on buns and serve immediately.
