Black Bean Burger

Ingredients
- •2 cans (15 oz each) black beans, drained and rinsed
- •1/2 cup panko breadcrumbs
- •1/4 cup red onion, finely diced
- •1/4 cup fresh cilantro, chopped
- •2 cloves garlic, minced
- •1 large egg
- •2 tablespoons olive oil
- •1 teaspoon cumin
- •1/2 teaspoon chili powder
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •4 burger buns
- •as needed toppings (lettuce, tomato, avocado, salsa)
Directions
- 1Mash the black beans in a large bowl until mostly broken down but still slightly chunky.
- 2Stir in panko, red onion, cilantro, garlic, egg, cumin, chili powder, salt, and pepper until combined.
- 3Form mixture into 4 patties about 3/4-inch thick.
- 4Heat olive oil in a large skillet over medium-high heat.
- 5Cook patties for 4-5 minutes per side until golden brown and crispy.
- 6Toast burger buns lightly in the skillet if desired.
- 7Assemble burgers with patties and desired toppings on buns and serve immediately.
