Blackberry Pie

Ingredients

  • 2 unbaked 9-inch pie crusts
  • 5 cups fresh blackberries
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 egg
  • 1 tablespoon water

Directions

  1. 1Preheat oven to 375°F. Place one pie crust in a 9-inch pie dish.
  2. 2In a large bowl, combine blackberries, sugar, cornstarch, salt, lemon juice, and vanilla extract, stirring gently until berries are evenly coated.
  3. 3Pour filling into pie crust and dot with butter. Cover with second crust, seal edges, and cut vents in top.
  4. 4Whisk together egg and water, then brush over top crust for a golden finish.
  5. 5Bake for 50-60 minutes until crust is golden brown and filling bubbles at edges.
  6. 6Cool on wire rack for at least 2 hours before slicing and serving.
