Blackberry Pie

- •2 unbaked 9-inch pie crusts
- •5 cups fresh blackberries
- •3/4 cup granulated sugar
- •1/4 cup cornstarch
- •1/4 teaspoon salt
- •1 tablespoon fresh lemon juice
- •1/2 teaspoon vanilla extract
- •1 tablespoon butter
- •1 egg
- •1 tablespoon water
Directions
- 1Preheat oven to 375°F. Place one pie crust in a 9-inch pie dish.
- 2In a large bowl, combine blackberries, sugar, cornstarch, salt, lemon juice, and vanilla extract, stirring gently until berries are evenly coated.
- 3Pour filling into pie crust and dot with butter. Cover with second crust, seal edges, and cut vents in top.
- 4Whisk together egg and water, then brush over top crust for a golden finish.
- 5Bake for 50-60 minutes until crust is golden brown and filling bubbles at edges.
- 6Cool on wire rack for at least 2 hours before slicing and serving.
