Blackened Fish

Ingredients
- •4 fish fillets (such as mahi-mahi or redfish), about 6 oz each
- •2 tablespoons paprika
- •1 tablespoon garlic powder
- •1 tablespoon onion powder
- •1 tablespoon cayenne pepper
- •1 teaspoon dried oregano
- •1 teaspoon dried thyme
- •1 teaspoon black pepper
- •1 teaspoon salt
- •4 tablespoons butter
Directions
- 1Mix paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, black pepper, and salt in a small bowl to create the blackening seasoning.
- 2Pat fish fillets dry with paper towels and coat both sides generously with the seasoning mixture.
- 3Heat a cast-iron skillet over high heat until it is very hot, about 2-3 minutes.
- 4Add butter to the skillet and swirl to coat evenly.
- 5Place seasoned fish fillets in the hot skillet and cook for 2-3 minutes per side until a dark, crusty crust forms and the fish is cooked through.
- 6Transfer fish to plates and serve immediately with lemon wedges.
