Blueberry Lemon Bars

Ingredients
- •1 cup all-purpose flour
- •1/4 cup powdered sugar
- •1/2 cup butter, softened
- •2 large eggs
- •1 cup granulated sugar
- •3 tablespoons fresh lemon juice
- •2 teaspoons lemon zest
- •2 tablespoons all-purpose flour
- •1/2 teaspoon baking powder
- •1 1/2 cups fresh blueberries
- •1 cup powdered sugar for glaze
- •2 tablespoons lemon juice for glaze
Directions
- 1Preheat oven to 350°F and line an 8x8 inch baking pan with parchment paper.
- 2Mix 1 cup flour, 1/4 cup powdered sugar, and butter until crumbly, then press into the bottom of the pan and bake for 10 minutes.
- 3Whisk together eggs, granulated sugar, lemon juice, and lemon zest until combined.
- 4Fold in 2 tablespoons flour and baking powder, then gently fold in blueberries.
- 5Pour the filling over the crust and bake for 25-30 minutes until set and lightly golden.
- 6Cool completely, then whisk together 1 cup powdered sugar and 2 tablespoons lemon juice to make the glaze and drizzle over the bars.
- 7Cut into 16 squares and serve.
