Blueberry Pancakes

Ingredients
- •2 cups all-purpose flour
- •2 tablespoons sugar
- •2 teaspoons baking powder
- •1/2 teaspoon salt
- •2 eggs
- •1 3/4 cups milk
- •4 tablespoons melted butter
- •1 1/2 cups fresh blueberries
- •as needed butter for cooking
Directions
- 1Whisk together flour, sugar, baking powder, and salt in a large bowl.
- 2In another bowl, beat eggs, then mix in milk and melted butter.
- 3Pour wet ingredients into dry ingredients and stir until just combined; do not overmix.
- 4Gently fold blueberries into the batter.
- 5Heat a griddle or skillet over medium-high heat and lightly butter it.
- 6Pour 1/4 cup batter for each pancake and cook until bubbles form on top, about 2 minutes, then flip and cook until golden, about 1-2 minutes.
- 7Serve warm with maple syrup and additional blueberries.
