Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 2 cups fresh blueberries
  • 1 tablespoon lemon zest

Directions

  1. 1Preheat oven to 325°F and grease a 9x5 inch loaf pan or bundt pan.
  2. 2Whisk together flour, baking powder, and salt in a bowl.
  3. 3Cream butter and sugar until light and fluffy, about 3 minutes. Beat in eggs one at a time, then mix in sour cream and lemon juice.
  4. 4Fold the flour mixture into the wet ingredients until just combined. Gently fold in blueberries and lemon zest.
  5. 5Pour batter into prepared pan and smooth the top.
  6. 6Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
  7. 7Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
