Blueberry Pound Cake

- •3 cups all-purpose flour
- •1 teaspoon baking powder
- •1/2 teaspoon salt
- •1 cup unsalted butter, softened
- •2 cups granulated sugar
- •4 large eggs, room temperature
- •1 cup sour cream
- •2 tablespoons fresh lemon juice
- •2 cups fresh blueberries
- •1 tablespoon lemon zest
Directions
- 1Preheat oven to 325°F and grease a 9x5 inch loaf pan or bundt pan.
- 2Whisk together flour, baking powder, and salt in a bowl.
- 3Cream butter and sugar until light and fluffy, about 3 minutes. Beat in eggs one at a time, then mix in sour cream and lemon juice.
- 4Fold the flour mixture into the wet ingredients until just combined. Gently fold in blueberries and lemon zest.
- 5Pour batter into prepared pan and smooth the top.
- 6Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
