Bobotie

A fragrant South African spiced mince curry topped with a creamy egg custard and baked until golden.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 500g ground beef
  • 2 tablespoons curry powder
  • 1 tablespoon turmeric
  • 2 slices bread, soaked in milk
  • 1/4 cup raisins
  • 2 tablespoons chutney
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk

Directions

  1. 1Preheat oven to 180°C (350°F).
  2. 2Heat oil in a large skillet and sauté onion and garlic until softened, about 3 minutes.
  3. 3Add ground beef and brown, breaking it up as it cooks, about 5 minutes.
  4. 4Stir in curry powder, turmeric, soaked bread, raisins, chutney, and salt; simmer for 5 minutes.
  5. 5Transfer mixture to a baking dish and spread evenly.
  6. 6Whisk together eggs and milk, then pour over the meat mixture.
  7. 7Bake for 20-25 minutes until the egg topping is set and golden.
  8. 8Let cool for 5 minutes before serving.
