Boiled Yam with Egg Sauce (Nigerian Breakfast)

Ingredients
- •2 lb white yam, peeled and cut into chunks
- •6 eggs
- •3 medium tomatoes, diced
- •1 red bell pepper, diced
- •1 medium yellow onion, sliced
- •1 fresh chili, minced
- •3 tbsp vegetable oil
- •1 1/2 tsp salt
- •1/2 tsp black pepper
Directions
- 1Place the white yam in salted water and boil for 18–20 minutes until fork-tender.
- 2Meanwhile, heat vegetable oil and cook onion, bell pepper, and chili for 5 minutes.
- 3Add tomatoes, half the salt, and black pepper and cook until the tomatoes soften, about 6 minutes.
- 4Beat the eggs with the remaining salt and pour them into the tomato mixture.
- 5Fold the eggs gently until softly set, about 3 minutes.
- 6Drain the white yam and serve it hot with the egg sauce spooned alongside.
💡 Do not overboil white yam; once the edges begin breaking apart, the chunks quickly turn waterlogged.
