Boiled Yam with Egg Sauce (Nigerian Breakfast)

Ingredients

  • 2 lb white yam, peeled and cut into chunks
  • 6 eggs
  • 3 medium tomatoes, diced
  • 1 red bell pepper, diced
  • 1 medium yellow onion, sliced
  • 1 fresh chili, minced
  • 3 tbsp vegetable oil
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Place the white yam in salted water and boil for 18–20 minutes until fork-tender.
  2. 2Meanwhile, heat vegetable oil and cook onion, bell pepper, and chili for 5 minutes.
  3. 3Add tomatoes, half the salt, and black pepper and cook until the tomatoes soften, about 6 minutes.
  4. 4Beat the eggs with the remaining salt and pour them into the tomato mixture.
  5. 5Fold the eggs gently until softly set, about 3 minutes.
  6. 6Drain the white yam and serve it hot with the egg sauce spooned alongside.

💡 Do not overboil white yam; once the edges begin breaking apart, the chunks quickly turn waterlogged.
