Bolón de Verde (Ecuadorian Plantain and Cheese Balls)

Ingredients
- •3 large green plantains, peeled and cut into chunks
- •1 cup queso fresco, crumbled
- •2 tbsp unsalted butter
- •2 tbsp vegetable oil
- •3/4 tsp salt
- •1/4 tsp black pepper
Directions
- 1Boil the green plantains in salted water for 15 minutes until completely tender.
- 2Drain the plantains and mash them immediately with butter, salt, and black pepper.
- 3Fold the queso fresco through the warm plantain mash until evenly distributed.
- 4Divide the mixture into eight portions and shape each portion into a compact ball.
- 5Heat vegetable oil in a skillet and flatten each ball slightly with your palm.
- 6Pan-crisp the bolones for 3–4 minutes per side until golden and serve hot.
💡 Shape the bolones while the plantain mash is still warm; once it cools, the mixture becomes harder to compact without cracking.
