Ingredients

  • 3 large green plantains, peeled and cut into chunks
  • 1 cup queso fresco, crumbled
  • 2 tbsp unsalted butter
  • 2 tbsp vegetable oil
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Boil the green plantains in salted water for 15 minutes until completely tender.
  2. 2Drain the plantains and mash them immediately with butter, salt, and black pepper.
  3. 3Fold the queso fresco through the warm plantain mash until evenly distributed.
  4. 4Divide the mixture into eight portions and shape each portion into a compact ball.
  5. 5Heat vegetable oil in a skillet and flatten each ball slightly with your palm.
  6. 6Pan-crisp the bolones for 3–4 minutes per side until golden and serve hot.

💡 Shape the bolones while the plantain mash is still warm; once it cools, the mixture becomes harder to compact without cracking.
