Bolinho de Arroz (Brazilian Rice Fritters)
Brazilian savoury fritters made from leftover rice, egg, Parmesan, parsley, and scallion, fried until crisp outside and tender within.

Ingredients
- •3 cups cooked white rice, chilled
- •2 eggs
- •1/2 cup Parmesan cheese, grated
- •1/2 cup all-purpose flour
- •3 green onions, thinly sliced
- •1/4 cup fresh parsley, chopped
- •1 clove garlic, minced
- •1/2 tsp salt
- •1/4 tsp black pepper
- •2 cups for frying vegetable oil
Directions
- 1Combine rice, eggs, Parmesan, flour, green onions, parsley, garlic, salt, and pepper in a large bowl.
- 2Press and stir the mixture until it holds together when squeezed in your hand.
- 3Shape heaped tablespoons into small oval fritters.
- 4Heat oil to 350°F (175°C) in a deep skillet or saucepan.
- 5Fry the fritters in batches for 3–4 minutes, turning once, until crisp and golden.
- 6Drain on a rack and cool slightly before serving or packing.
💡 Cold leftover rice binds better than fresh hot rice because its drier grains absorb the egg without making the batter loose.
