Bolinho de Arroz (Brazilian Rice Fritters)

Brazilian savoury fritters made from leftover rice, egg, Parmesan, parsley, and scallion, fried until crisp outside and tender within.

Ingredients

  • 3 cups cooked white rice, chilled
  • 2 eggs
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup all-purpose flour
  • 3 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups for frying vegetable oil

Directions

  1. 1Combine rice, eggs, Parmesan, flour, green onions, parsley, garlic, salt, and pepper in a large bowl.
  2. 2Press and stir the mixture until it holds together when squeezed in your hand.
  3. 3Shape heaped tablespoons into small oval fritters.
  4. 4Heat oil to 350°F (175°C) in a deep skillet or saucepan.
  5. 5Fry the fritters in batches for 3–4 minutes, turning once, until crisp and golden.
  6. 6Drain on a rack and cool slightly before serving or packing.

💡 Cold leftover rice binds better than fresh hot rice because its drier grains absorb the egg without making the batter loose.
