Directions
- 1Whisk together flour, baking powder, sugar, and salt in a large bowl.
- 2Beat in eggs, milk, and vanilla until a smooth, thick batter forms — it should be scoopable, not pourable.
- 3Heat oil in a deep saucepan to 350°F (175°C); test with a small drop of batter — it should sizzle and float immediately.
- 4Mix cinnamon sugar together in a shallow bowl and set aside.
- 5Drop heaping teaspoons of batter into hot oil in batches of 6-8, being careful not to crowd the pan.
- 6Fry, turning occasionally with a slotted spoon, until deep golden all over, about 3 minutes per batch.
- 7Remove with a slotted spoon and drain on a paper towel-lined plate for 30 seconds.
- 8While still warm, roll each fritter in cinnamon sugar to coat generously and serve immediately.
💡 The batter should be just thick enough to hold its shape on a spoon — if it's too runny, add flour a tablespoon at a time. These are best eaten within 20 minutes of frying. For a fun variation, tuck a small cube of cream cheese or banana slice into the center of each before frying.
