Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup whole milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Oil for frying
  • 2 tablespoons powdered sugar for dusting

Directions

  1. 1In a large bowl, beat eggs with sugar until pale and fluffy, about 3 minutes.
  2. 2Stir in melted butter, milk, and vanilla extract until combined.
  3. 3In another bowl, whisk together flour, baking powder, and salt, then fold gently into the wet mixture.
  4. 4Heat oil in a deep pan to 350°F (175°C).
  5. 5Drop spoonfuls of batter into hot oil and fry until golden brown on both sides, about 2-3 minutes total.
  6. 6Remove with a slotted spoon and drain on paper towels.
  7. 7Dust generously with powdered sugar while still warm and serve immediately.
