Ingredients

  • 500g fresh bamboo shoots, sliced
  • 400g pork belly, cubed
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, sliced
  • 2 dried shiitake mushrooms
  • 1 cup chicken broth
  • 2 dried red chilies
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar

Directions

  1. 1Heat oil in a wok or large pot over medium-high heat and brown the pork belly cubes until golden on all sides, about 5 minutes.
  2. 2Add minced garlic, ginger slices, and dried chilies, stirring for 1 minute until fragrant.
  3. 3Add the sliced bamboo shoots and dried mushrooms, stirring to combine with the pork for 2 minutes.
  4. 4Pour in soy sauce, oyster sauce, sugar, and chicken broth, then bring to a boil.
  5. 5Reduce heat to low, cover, and simmer for 25-30 minutes until the pork is tender and flavors meld.
  6. 6Drizzle with sesame oil, stir well, and cook uncovered for another 2 minutes.
  7. 7Taste and adjust seasoning with additional soy sauce if needed, then serve hot with steamed rice.
