Braised Fish in Black Bean Sauce

Ingredients

  • 1.5 lbs whole fish or thick fish fillets
  • 3 tbsp fermented black beans
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • 3 green onions, chopped
  • 1 tsp cornstarch mixed with 2 tbsp water

Directions

  1. 1Rinse black beans and lightly mash them with garlic and ginger in a small bowl.
  2. 2Heat oil in a large shallow pan or wok over medium-high heat and lightly pan-fry the fish for 2 minutes on each side until golden.
  3. 3Add the black bean mixture to the pan and stir for 1 minute until fragrant.
  4. 4Pour in soy sauce, oyster sauce, sugar, and chicken broth around the fish.
  5. 5Bring to a simmer, cover, and braise for 8-10 minutes until the fish is cooked through and flakes easily.
  6. 6Stir the cornstarch slurry and add to the sauce to thicken, cooking for 1 minute.
  7. 7Transfer to a serving plate, pour sauce over the fish, and garnish with green onions.
