Branzino al Forno
A classic Italian baked sea bass with lemon, garlic, and fresh herbs that's crispy outside and tender inside.
⏱ 35 minServes 2Italian
Ingredients
- •2 whole branzino (sea bass), cleaned and scaled
- •3 tablespoons extra virgin olive oil
- •2 lemons, sliced
- •4 cloves garlic, minced
- •2 tablespoons fresh parsley, chopped
- •1 tablespoon fresh rosemary, chopped
- •1 tablespoon fresh thyme, chopped
- •1/2 teaspoon sea salt
- •1/4 teaspoon black pepper
- •1/2 cup white wine
- •1/2 cup cherry tomatoes, halved
Directions
- 1Preheat oven to 400°F (200°C). Pat the branzino dry with paper towels inside and out.
- 2Place fish on a parchment-lined baking sheet. Season cavities with salt, pepper, and stuff with half the lemon slices and herbs.
- 3Drizzle the outside of each fish with olive oil, then sprinkle with garlic, remaining herbs, salt, and pepper.
- 4Arrange remaining lemon slices and cherry tomatoes around the fish on the baking sheet.
- 5Pour white wine around (not over) the fish to create a flavorful base.
- 6Bake for 18-22 minutes until the fish is opaque and flakes easily with a fork.
- 7Transfer fish to serving plates and drizzle with pan juices before serving.
