Branzino al Forno

Branzino al Forno

A classic Italian baked sea bass with lemon, garlic, and fresh herbs that's crispy outside and tender inside.

⏱ 35 minServes 2Italian

Ingredients

  • 2 whole branzino (sea bass), cleaned and scaled
  • 3 tablespoons extra virgin olive oil
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup white wine
  • 1/2 cup cherry tomatoes, halved

Directions

  1. 1Preheat oven to 400°F (200°C). Pat the branzino dry with paper towels inside and out.
  2. 2Place fish on a parchment-lined baking sheet. Season cavities with salt, pepper, and stuff with half the lemon slices and herbs.
  3. 3Drizzle the outside of each fish with olive oil, then sprinkle with garlic, remaining herbs, salt, and pepper.
  4. 4Arrange remaining lemon slices and cherry tomatoes around the fish on the baking sheet.
  5. 5Pour white wine around (not over) the fish to create a flavorful base.
  6. 6Bake for 18-22 minutes until the fish is opaque and flakes easily with a fork.
  7. 7Transfer fish to serving plates and drizzle with pan juices before serving.
