Bread and Butter Pudding

A classic comfort dessert with buttered bread cubes soaked in a creamy custard and baked until golden and lightly caramelized.

Ingredients

  • 8 slices white bread, crusts removed
  • 50g butter, softened
  • 75g dried fruit (raisins or sultanas)
  • 3 large eggs
  • 300ml whole milk
  • 300ml double cream
  • 50g caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground nutmeg
  • 2 tbsp demerara sugar (for topping)

Directions

  1. 1Preheat oven to 180°C (160°C fan). Butter a baking dish and spread one side of each bread slice with softened butter.
  2. 2Cut buttered bread into triangles and layer in the dish, overlapping slightly, sprinkling dried fruit between layers.
  3. 3Whisk together eggs, milk, cream, caster sugar, vanilla, and nutmeg until combined. Pour over the bread, pressing down gently, and let soak for 10 minutes.
  4. 4Sprinkle demerara sugar evenly over the top and bake for 35-40 minutes until golden brown and just set.
  5. 5Let cool for 5 minutes before serving warm with custard or cream.
