⏱ 35 minServes 4American
Ingredients
- •500 g lean ground beef (80/20)
- •1 tsp salt
- •1/2 tsp black pepper
- •8 thick-cut bacon strips
- •1 tbsp pure maple syrup
- •4 large eggs
- •1 tbsp butter
- •4 cheddar cheese slices
- •3 tbsp mayonnaise
- •1 tbsp chipotle peppers in adobo sauce, minced
- •4 English muffins
- •1 cup baby spinach or arugula
- •1 ripe tomato, sliced
Directions
- 1Cook bacon in a large cast-iron skillet over medium heat until crisp, about 6–7 minutes; brush with maple syrup in the last minute, then transfer to a paper towel-lined plate.
- 2Divide ground beef into 4 loosely packed balls (about 125 g each) and season generously with salt and pepper.
- 3Increase skillet heat to high; working in batches, place a ball in the skillet and immediately smash flat with a spatula to about 1 cm thick; cook 2–3 minutes until a deep crust forms.
- 4Flip each patty, immediately lay a cheddar slice on top, and cook 1–2 more minutes; remove and tent with foil.
- 5Reduce heat to medium; melt butter in the skillet and fry eggs sunny-side up or over-easy, 2–3 minutes, seasoning with salt and pepper.
- 6Stir together mayonnaise and chipotle adobo to make chipotle mayo.
- 7Toast English muffins in a toaster or in the skillet cut-side down for 1–2 minutes.
- 8Spread chipotle mayo on both muffin halves, then layer spinach, tomato, cheesy patty, two bacon strips, and fried egg; serve immediately.
💡 Chipotle peppers in adobo are available in the international aisle at most Canadian grocery stores (Old El Paso or La Morena brands). Sub with 1/2 tsp smoked paprika plus a dash of hot sauce if unavailable. For a runnier yolk that acts as a sauce, go sunny-side up.
