Ingredients
- •1 lb broccoli rabe, trimmed
- •3 tbsp olive oil
- •4 cloves garlic, thinly sliced
- •1/2 tsp red pepper flakes
- •1 tbsp fresh lemon juice
- •3/4 tsp salt
Directions
- 1Bring a pot of salted water to a boil and blanch the broccoli rabe for 2 minutes.
- 2Drain the broccoli rabe well and squeeze out excess water once cool enough to handle.
- 3Heat olive oil in a skillet and cook garlic until lightly golden, about 1 minute.
- 4Add red pepper flakes and broccoli rabe and toss to coat.
- 5Sauté for 5–6 minutes until tender and browned at a few edges.
- 6Finish with lemon juice and salt and serve hot.
💡 Brief blanching mellows the strongest bitterness without flattening the broccoli rabe's distinctive flavour.
