Ingredients

  • 1 lb broccoli rabe, trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 1/2 tsp red pepper flakes
  • 1 tbsp fresh lemon juice
  • 3/4 tsp salt

Directions

  1. 1Bring a pot of salted water to a boil and blanch the broccoli rabe for 2 minutes.
  2. 2Drain the broccoli rabe well and squeeze out excess water once cool enough to handle.
  3. 3Heat olive oil in a skillet and cook garlic until lightly golden, about 1 minute.
  4. 4Add red pepper flakes and broccoli rabe and toss to coat.
  5. 5Sauté for 5–6 minutes until tender and browned at a few edges.
  6. 6Finish with lemon juice and salt and serve hot.

💡 Brief blanching mellows the strongest bitterness without flattening the broccoli rabe's distinctive flavour.
